Caramelized Apple & Gouda Sandwiches

    Wash and dry all produce. Halve, peel, and thinly slice shallot . Halve and core apple ; thinly slice into half-moons.

    Heat cooking oil and butter in a large pan (medium heat). Add the sliced shallot, half the apple, ¼ tsp dried thyme (or ½ tsp for 4), and salt ; cook, stirring occasionally, until tender, ⏱️ 3 minutes . Then add 2 tbsp water and cook, stirring, until evaporated, ⏱️ 45 seconds ; season with black pepper . Turn off heat; transfer to a small bowl. Wipe out the pan.

    Place sourdough bread on a clean surface. Spread half the slices with fig mustard , then top with the cooked apple and gouda cheese . Close with the remaining slices.

    Melt 1 tbsp butter in the pan over medium heat. Add the sandwiches and cook until golden on the first side, ⏱️ 3 minutes . Remove from the pan; add another tbsp butter and return the sandwiches to cook the second side until bread is golden and cheese melts, ⏱️ 3 minutes . (For 4 servings, cook in batches, adding 1 tbsp butter per batch.)

    In a large bowl , toss baby lettuce , grape tomatoes , mini cucumber , and the remaining sliced apple with italian dressing ; season with salt and pepper. Serve the sandwiches alongside the salad.
